beets with salsify, puy lentils, ginger & sunchoke
swordfish with kohlrabi, grapefruit & dry vermouth
chicken with artichokes, sweet corn & foie gras sauce
kentucky beef brisket with jimmy nardello peppers & cabbage

peach sorbet with almonds & raspberries
elderflower custard with gooseberries & cucumber
